Use your favorite berries to add another level of goodness!
- 3 cups fresh diced rhubarb
- 1 cup raw sugar
- 3 tablespoons flour substitute GF flour if needed
- 1 cup packed brown sugar
- 1 cup oatmeal - quick cooking look for GF oats if needed
- 1 1/2 cup flour substitute GF flour if needed
- 1 cup butter
Preheat oven to 375 degrees. Lightly grease 9x13 pan.
Combine rhubarb, raw sugar and 3 tablespoons of flour. Stir well and spread into pan evenly.
Combine brown sugar, oats, and remaining flour. Stir well and cut in butter until crumbly. Sprinkle over rhubarb.
Bake for 40 minutes. Serve warm with ice cream.
Substitute 1 cup of rhubarb with strawberries, blueberries, or other fruit.
